PC restarting during gaming

Hi all,
I have this problem where my computer is restarting during some types of games, such as Fortnite, RS6 Siege, Witcher 3 and War Thunder. I assumed that it must be the PSU as I saw on forums that this is likely the cause, so i bought a SeaSonic 650w ultra prime titanium and i'm still getting the problem. So far I have:

- Downloaded new Bios software
- Updated drivers
- Clean booted
- Checked settings for power plan
- Full check on RAM
- Virus checked
- Bench-marked - temps remained fine on both CPU and GPU, did restart once though

I did RMA a few products as I made a mistake a few months ago where I received a new MB, CPU and RAM sticks as these were faulty - all came originally packaged except for the MB which I am suspecting to be the issue assuming it might be refurbished. Since I have installed all of the new parts it started doing this and I have tried many solutions that have not worked. If anyone could help it would be much appreciated and I am debating to send the MB back.

- i7700k
- EVGA FTW3 GTX1080TI
- Corsair Vengeance 2x8GB DDR4 3200
- H115i 360mm
- H270 MSI PRO CARBON ATX
- 2TB SEAGATE HD
- 500GB 850 EVO
- SeaSonic 650W Ultra Prime Titanium

Hello,
I have, all maxed settings (Witcher 3) on a 1080p 144hz screen. Stats read:
- GPU Usage 86%
- GPU temperature 70c (GPU fans only half way to their maximum)
- GPU power draws 96-98%

- CPU temperature max 60c with AIO on a balanced profile (as a package)
- CPU usage 52% (as a package)

I do not believe it is a fault with these parts of hardware.
