A single GPU is always better. I would use just one P4000.
Architectural CAD is not too hard on a GPU. You don't need the best one in the world. I am using $5000 PTC Creo with a $500 GTX1070 just fine. A Quadro would be better for the certified driver support though.

Look into be quiet! CPU coolers and fans. Just as good as Noctua.
And they actually look good.

I suggest googling, & searching on the relevant software's forums, how SLI scales with the particular software you'll be using.
Will it give 2x performance? Is the extra heat, power draw & cost worth it? Its software specific.

I don't change pieces every two years so better buy one that doesn't need changes for at least next half a decade :)
be using it for at least 10-12 hours a day and I'm known to set fire to previous PCs so I'm not to be trusted, haha
What software do you use? do you work with Iray, Vray and rhino?


 
no they have an Autodesk license so we don't get to use all the cool software just Revit and inventor and stuff like that, ya lol its bad when you cant enter your 3d view without having a slideshow lol, I have a Ryzen 1600 and a gtx 1070ti I couldn't imagine that system lol
