i am currently trying to build my first pc and need to remove the bracket for my aio cooler, ive tried 3 different sized screwdrivers and only managed to remove 1 screw and slightly damage my hand, are they always so tight, am i weak and does anyone have any tips to remove these.

My best advice is to use the right tool.
Whatever the heads are....use the proper bit (tool) for them.
You don't want to screw up the heads which will lead to you having to screw around with that.
....and make sure you can get the tool square with the head....don't be going at it on an angle.
If worse comes to worse you can use penetrating oil but be careful not to get it anywhere except where it needs to be.
