To expand on that a bit, while it's true that it won't make much of a difference in terms of CPU performance in most software, that's not so true for integrated graphics. If a system doesn't have a dedicated graphics card, but instead uses Intel's or AMD's integrated graphics built into the CPU, then dual channel mode can have a much more notable impact on 3D performance, and there's more reason to use two sticks.

If you have a dedicated graphics card though, the performance impact will typically be quite minor. Considering that the price difference for two sticks is also generally minor though, it's probably worth using two sticks, unless perhaps your motherboard only has two RAM slots, and you intend on adding another identical stick at a later time.
