The 8400 is noticeable better,in multitasking and slightly better in gaming but if your current system is compatible with the 7500 why spend more money on a mobo?
because the performance on the i5 8400 is better especially on gaming. Should i just stick with the i5 7500? Is it still powerful?

Again, it depends on the use you want it for. The 7500 is still powerful enough for most cases. The 7500 has 4 cores vs the 6 core 8400, so it would come down to your budget. Personally, I don't think that the difference between these two is worth a new mobo. If it does fit in your budget though. go for it.
