So I currently have an AMD R9 270x in my computer and am trying to get it VR ready but I’m being held back by the GPU My wife also has the same GPU and I’m wondering if putting both in my computer and getting her a new one will be enough for VR or should I try and find a better graphics card and bail on my old one? They both still run perfectly after 3-4 years of abuse.

Theoretically a 500W PSU might be able to run two of those on a 500W PSU. But, it's going to be right on the limit. I think, one R9 270x has a max power consumption around 180W. A fairly power hungry PC without a GPU might consume around 120W, which I don't think yours is anywhere near. So... Maybe... :)
It's probably not going to work as PSU's rarely are able to distribute that much of their available power to a couple of GPU's (360W in your crossfire case). This, because a power supply's output is "split" into rails, with their individual max current of which the total power sum in yours case is 500W. (Add to that, the efficiency of a power supply. 500 rated watts normally means you only get 80% of that out on the inside. The rest disappears as heat and other useless things.)
You might be able to run both GPU's if you "barebone" your PC, only keeping one drive, no other PCI-Ex cards and only your mouse and keyboard connected.
500W is more than enough, with over a 100W margin, for a single GTX 1060. They use roughly the same amount of power as the R9 270x you have now.
