So, a while back after i built my new computer, i noticed that the sound card drivers had an audio channel setting. It goes 2, 4, 6 and 8. I only have 2.1 stereo with a left speaker, a right speaker and a sub-woofer under the desk. So with my current setup, how many channels should i have? Does changing them actually do anything? Thanks!

You really only have a stereo system so should use 2 channels.

If you had surround sound speakers 5.1 or 7.1 you could use the extra channels.

It would make a difference if you had a source recorded for 5.1 or 7.1 think games or movies.
