Currently running an i5 6600k @ 4.3Ghz and just bought a GTX 1080.

Would I be okay to hook up a 1080 to a 500W power supply and still be able to overclock it in Afterburner?

Or should I just take the safe road and just buy a 600W/700W power supply?

Nvidia's website recommends a 500W PSU at minimum, so at first I thought I'd be okay but I just wanted to clear up any doubts I have and see if anyone has had any problems with the same issue.

The PSU is not a good model and is from FSP Group inc, so there shouldn't be any problems in terms of quality.

FSP makes some good PSUs, and some bad ones too. If yours is a high quality one, I would still leave it at stock. If its a poor quality one, change it asap.

Mostly, for overclocking a system like yours, a good quality 550W-600W PSU is sufficient, but yours can be lower quality. Let us know the exact model number of the PSU.
