PCIe NVME SSD - fails to boot after full shutdown but okay after loading BIOS

So I recently bought a set of hardware for what's probably an unusual configuration - a laptop from Eluktronics that allows for installation of a desktop CPU plus additional storage and memory options. (I posted the hardware / software details at the bottom of this post.)

Basic problem: I have to load the BIOS every time I boot the computer after a full shutdown, or the computer will fail to read the SSD to boot. ***Edit: Also can't put my computer on standby / sleep or otherwise it will crash and reboot.

Initially I couldn't get the BIOS to read the PCIe NVME SSD so that I could boot a USB disk and install WinPro 10 on the SSD. After researching this site and google for hours, I played around with the BIOS and changing the SATA Mode from AHCI to Intel RST Premium and rebooting, the SSD showed up but still wouldn't boot (error message: "Reboot and select proper boot device"). Changed the mode back to AHCI; BIOS wouldn't recognize. Then I swapped the PCIe slot the SSD's sitting in and repeated the steps above, and afterwards the BIOS recognized the SSD, and I installed Windows 10 Pro. w00t, happy day right? Download Steam, marvel at spiffy graphics, gets my old laptop ready to retire.

So then I boot up the laptop this morning and same error I was getting before: "Reboot and select proper boot device"). Did the same BIOS dance back and forth, and suddenly the SSD's back. In fact, after about ten tests, all I have to do is load the BIOS and change zero settings, and Windows will boot. This is a workaround but an unnecessary and annoying workaround, plus I'm concerned I'm causing unforeseen problems in the future.

I managed to get the manual from Eluktronics, and I noted the specifications below (see the imgur links below). I realized I have a mismatch (I have ONE SSD that's an M.2 PCIe Gen3 x2 NVMe, instead of a PCIe Gen3 x4).

Any suggestions? Did I screw up the SSD purchase and should have bought a Gen3 x4? Thank you greatly for your guys' time; I've been a lurker for many years, and y'all always have great insights on computer issues which gets me the solution I need. Today is the first time I've ever had to post.

Laptop: Eluktronics W650KK1
Storage: MyDigitalSSD SBX Single Sided 80mm (2280) M.2 PCI Express 3.0 x2 (PCIe Gen3 x2) NVMe SSD (256GB) (MDNVME80-SBX-0256)
CPU: Intel Core i3-7100, 3.9GHZ
BIOS: Aptio Setup Utility 2017 AMI, v1.05.8TEI
Motherboard: W65KJ1_KK1 (no manufacturer listed, I think it's Eluktronics)
OS: Windows 10 Pro

I've done both. I.e. I've loaded the BIOS, saved the settings, then Windows loads. I've also loaded the BIOS, exited without saving, and Windows loads. The problem is when I shut down or put the computer on standby; the laptop entirely forgets the SSD is plugged in.

I've done a reset on the SSD (i.e. reinstalled Windows); no change. I also did a power reset this morning and no change.

It seems the BIOS is "forgetting" the SSD.....which is why I suggested "battery" and "save".

Another option would be to upgrade the BIOS (if you aren't using the newest version)....on the chance there is an issue with that SSD and the BIOS you're using.

Hey so just to close the loop on this: I ended up returning the MyDigitalSSD SBX SSD and getting an XPG SX8200. No issues at this point; worked exactly as it should. I don't know if the SBX had its own problems or if the laptop simply wasn't compatible with it, as both the SSD manufacturer and laptop manufacturer stated it was the other's issue. Thanks for your help.
