1st Desktop in 20 years.

hi guys, as the title says this is going to be my 1st desktop (in 20 years).

I tried in a game con (while taking my son) and quickly fell in love with DCS VR.
my goal is to build a pc that could let me immerse to the fullest in flight Sim games
i know hardware might be very expensive, but i'm turning to you as a community cause i dont want to buy stuff that i dont need. I'll refrase i'd like to invest the minimum needed to achieve the optimal levels of enjoyment.
so far my idea of a pc, would look like this (i know im going overkill,but i dont want to underperform):

Internals :

Motherboard: Crosshair VII hero (Wifi)
CPU: R7 2700x
GPU: 1080ti (if lower gets me same results in VR would go for lower)
RAM: 32Gb(2x16) or 16Gb(2x8) 3200Mhz probably Corsair CL 16 (can't find lower CL)
SSD: 2x250Gb NVMe.2 970 Evo (samsung) , Raid 0
HDD: 2Tb Seagate Barracuda
PSU: 850+ Wts gold Modular (any Brand)
CPU Cooler: Corsair Hydro H150i

Peripherals:

Monitor : Asus VG248QE 24'' LED LCD
Keyboard : Corsair K95 RGB PLATINUM Cherry MX Speed
Mouse: Logitech G700 (currently using on laptop)
HOTAS: Thrustmaster Warthog + Thrustmaster Pedals
VR Headset: Occulus Rift

Two comments.

Don't RAID your SSDs, just buy a bigger one. There is no gain other than on benchmarks and there are downsides.

PSU -- not just any brand, if you are spending money and want a great unit buy Seasonic.

edit: and to be on the safe side with your memory get something on the latest memory QVL from ASUS support.
Drop the RAID 0, where the slightest glitch means loss of all data, as NVME is plenty fast enough, and it helps zero percent in gaming anyway....; a system booting in 4 seconds versus 5 is not really noticeable.....

The 2700X comes w/ a nice cooler, save your money for a larger NVME SSD...
