Ryzen 5 2600x and GTX 1060 3gb good match?

The Ryzen 2600x is multiple times better than the Ryzen 3 1200, even with a good overclock. I would upgrade it. The 1060 is technically too "weak" for the 2600x, but you should still see a performance gain in gaming. If you have a big enough budget, I'd recommend upgrading to a 1070 if possible or even an upgrade to a 6GB version of the 1060 would see a good performance gain. But otherwise, yes, the CPU upgrade is overall the best choice you could make.

What is the make/model of your motherboard? Before attempting such an upgrade, you need to verify that the 2600x is compatible and whether you need to update your BIOS version.
While there are obviously stronger GPUs available, your GTX 1060 3GB is still plenty strong for most games. Only if this one is failing to meet some need would I consider replacing it.

It really depends on what you want to use your system for. But if gaming is your priority, then put your money in the GPU.

Based on the relative performance of the Ryzen 3 1200, even with a moderate overclock, the CPU will perform about equivalent to the CPU in my computer, the i7-3770K without overclock. This suggests the CPU will seriously bottleneck newer cards. What I mean by this, if you were to throw a 1080 Ti into this build, the 1080 ti would underperform by at least 15%, if not more. A CPU upgrade in this case would just make more sense than a graphics card upgrade. The 1060 isn't a terrible card, although 3GB of Dedicated GPU RAM leaves a lot to be desired.
