Feedback on my first PC build

Building a PC for gaming, light photo editing and VR. Put together this list based on some recommendations from friends and some personal research. My budget is $1600ish (I'm going to try to snag as many parts as I can in sales because I'm no particular rush to build and can wait a couple months) and I'm buying parts in the USA. Any feedback would be greatly welcomed, thank you!

A little over budget, but with a 2700x, and a GTX 1080ti. The 2700x doesn't have to have an aftermarket cooler right away. A 2600x would put you within your budget.

Everything looks good except the CPU cooler. It's not enough for an 8700K. Any particular price limit for a cooler or just as long as it fits into $1600?

From the top of my head, Noctua NH-D15 or NH-D15S are top of the line air coolers that allow for good overclocking.
Corsair H100i V2, H115i PRO, NZXT Kraken X62 Rev2 - are great all in one liquid coolers.

Before deciding on a cooler, you just gotta make sure it can fit your case. Other than that, it's good to go.

I'd go Ryzen, you'll have the cores/threads for editing and the money saved can be put towards a better GPU.

Just as long as it fits into the $1600, I'll look into one of those coolers then
 
Your build looks very good, you can build as is.
I have a few thoughts:

1. For a top end build using a i7-8700K a better cooler will be quieter and cool better.
The hyper212 is popular, but not exactly good or easy to install.
I might suggest a noctua NH-D15s, which will fit nicely, but other similar coolers will do as well.
There is no reason in such a good case for a liquid cooler.
They are more expensive, less reliable, noisier, harder to install, and do not cool any better in a good case like yours.
And... an air cooler will not leak.

2. I think there are more reliable hard drives available; WD or Hitachi.

3. One good thing about EVGA is that you get a 90 day upgrade option for a stronger card.
Read the fine print.

It is usually best to buy all at once since prices tend to drop over time.
But, I see Seasonic regularly on sale.
If you can get your case on sale, that is good too.
Monitors do not change much either.
