Both of these SSDs are very similarly priced on Amazon and I was wondering which one would be better for my needs.

Although I game mostly, I also use 3D modelling and rendering programs like Maya 2018. I also use Unreal Engine 4 as well. Will higher speeds improve performance on these types of programs (I already know they make very little difference during gaming, in terms of M.2 vs SATA)?

Edit: At this point, the Crucial MX500 is looking more appealing in terms of price, so I would go for that instead. The performance difference between that and the 860 EVO is not that huge.

You have two different technologies here. The M.2 drive resembles a flash drive and you have to make sure you MB supports it. An NVMe drive could be several times faster than a standard SATA SSD.
