My initial plan was to put my 27" monitor in my check in luggage and the rest of my setup will be carry on in a big sports duffel bag. So I just wanted to know if this is possible and how will the airport security react to this. Or, if you have any a better ideas on bringing my Mini ITX build, i'm all ears. Thank you.

It need not be hard sided, just one that will hold it's shape.
put some clothing around the case to pad it a bit better.

Your best bet is to go to the airport before hand and speak with the pilot or anyone from customer service. Bring your PC with you if you can and ask them if you are allowed to take it as carry on. Make sure to measure and weigh your PC cause it might be too heavy with all the components. Wouldn't it make more sense to bring a laptop with you? If necessary could you put the ITX PC inside your luggage? If you pack it in the cardboard box and foam that might prevent it from being damaged when it gets loaded and unloaded from the plane.

Alright, I'll contract the airlines first but if that fails then I guess I could try making some space in one of my luggage or cardboard boxes. And another thing, what about a curved monitor, is it safe to put it in my luggage as well?

How big is your ITX?

You are limited in carry on size.
typically 22 x 14 x 9.
You can fit even a modest M-ATX pc in that space.
I have done this before with no problems.
Yes, security checks it closely.
In an overhead compartment, the carry on will not get bumped around like checked luggage will.
I don't know that I would use a soft duffle for this.
A cheap light weight hard sided carry on would be better

It's a Node 202, Fractal Design and it says that the dimensions are 82 mm × 377 mm × 330 mm, 3.23 in × 14.84 in × 12.99 in. Still waiting for a response from the airlines and if they agree, then I would buy a hard sided carry on bag.
