GPU(s) for mining and gaming

So I have been mining a while on my r9 290 and making profits that are decent enough for me. However, I am currently upgrading my PC and have come to a dilemma.

1) I want to be able to run 1440p or 4k ultra
2) I don't want to sacrifice any mining performance (and would prefer to gain some)

What is my best option for a budget of under $500? I have considered keeping my r9 290 and buying a used gtx 1080, or selling my r9 290 and buying two used rx 580s. I am leaning towards the crossfire rx 580s which seem to give about the fps of a gtx 1080 on a game that is optimized for multi-gpu setups. However, I have read of lots of people who advocate for single-gpu setups due to how finicky multi-gpu setups can be. Any suggestions?

In gaming terms a 580 crossfire is about the same FPS as a 1080 GTX if the 580's have a stock BIOS. If your mining and gaming on a AMD card you want GPU's with Dual BIOS and you swap when you mine or game.

As far as 4K Ultra.. even a 1080 TI SLI struggles in some titles at holding 60+ FPS, as far as just being able to play 4K then the 1080 GTX is the best value with multi GPU support being spotty and bug ridden with current titles.
