Building my own PC used for anything else but studying !

Hi, is been years since i bought some new technology and currently i,m writing this on a 2012 ASUS notebook, so i decided is time for an upgrade looking at the prices of GPU and MOBOs right now. I made it clear that buying a pre-configured PC is more expensive and everyone i asked told me the same.

I decided to build my own pc and these are the specs I have in mind, but i'm looking for advice on what item to change for better compatibility and what item to upgrade for better performance.

My goal is to have a MB that's crossfire compatible and yet not to break the piggy's back.

I have in mind a AM4 socket motherboard i would pay as much as 90-100 euros for it, no more. I'm thinking between ASRock Fatal1ty AB350 gaming k4 and MSI B350 TOMAHAWK AM4. Next i would like the motherboard to have a Type-C port along with HDMI outputs and PCI-E for 2 GPUs.
I'm thinking of buying a RX580 8GB for starters and after some time adding up another 580 8GB just for fun, maybe i will get into 3D modeling and stuff (that's what I tell myself, but no I will use it to play Witcher III on ultra settings).

The processor.... I'm thinking I should get a Ryzen 1600X since the only difference is ~20 euros (depends on the location od the seller, if its in my country then you know is not 20, its 40 euros more expensive), or getting a 2600, 1700X, 1700, depends on if there will be a combo sale MB+CPU. I need your advice on this part of the build and on the RAM, in which i will get to now.

RAM... Tell me which RAM I should get because i haven't done much research on RAM !!!! HELP!!!

Storage: I'm using Samsung 860 EVO 500GB 2.5'' on my notebook which i plan to use it in the PC for some time until i buy a M.2 stick.

Nuclear Central: I also need advice on this one too, will 800W be enough or is too much and i can buy a lesser powerful supply ???

Well I think i said pretty much everything, but i didn't get into details about the tower what length, height, width it should be, I dont mind since the MB is big is not a B350M board. The tower can be mid sized to big.

Anything else you want to add, feel free because as I said is my first build and this laptop is getting really old, I can't say anything bad because i got more than 2.5k hours gaming and it never failed me once.

1) Ryzens benefict of fast ram ( choose 3000+ mhz if possible) , i picked 16gb for the example , 8 gb is fine too
2)500w will be ok for this build , i picked 750w if you gonna double your rx580
