Hi I have an MSI GT62VR 7rd and I'm trying to do a dual monitor set-up with the laptop screen off and the laptop itself displaying to 2 1080p 144hz monitors. I'm wondering if this is possible with displayport splitter as I only have 1 mini displayport as the output and the others being an HDMI and USB-C.

A splitter will just display the same thing on both monitors, and it is not likely to work at 144hz. Use the HDMI and the DP port, but likely forget about getting the monitors running at 144hz. You can check with MSI support for your model to see what refresh rates you can push from the external connections.
