Could I have done any damage to the motherboard or HDD/SSD? I was sleepy and thought I had already turned off my PC...

Immediately afterwards all the app icons were removed from the desktop screen and my PC completely froze (couldn't turn it off through the power button, had to turn off the PSU)

Solution
I don't think so but in any case you will need to test to make sure that everything is working. SATA supports hot swapping if the controller is setup properly so I do not think that damage would occur to the motherboard, if the SSD/HDD was in the middle of a write operation then you may have some data issues.
