2 individual drives is much better.
Any function to "merge" those into one volume will hamper speed and performance.

Looking at the detailed specifications, you might be able to do that BUT it would hurt your performance. The one M.2 slot is a PCIe 2.0 x4. That will lower the performance of your faster PCIe 3.0 M.2 slot. A single M.2 is a much better answer. 250GB for C: is sufficient to prevent accidentally filling it.
