Currently I have a i5 7600k overclocked to 4.8ghz at 1.25v stable. However I have a be quiet pure rock slim. When playing more demanding titles my temps jump to 70c+ and at idle is anywhere between 38-45c.
I have a corsair spec 01 case and it has very limited aio compatibility, on the website it says that it only supports 120mm aio's from corsair themselves but I just think that its a marketing thing.
I looked at 3 options so far.
DeepCool CAPTAIN 120EX
Cooler Master Masterliquid ML120R
Corsair H80i v2.
Which one would be best? Or do you recommend another AIO.
I am planning to overclock to around 5ghz ( I tried on my pure rock slim but temps jumped to 90c immiedatly after starting stress test)

A 120mm model will not be a good example of one. It will leave you frustrated with the lack of performance when overclocking. You are better off with what you have OR maybe something like the Noctua NH-U14S.

If you want to go with water cooling then do YOURSELF the favor of getting a case that will support a 240mm radiator, at least, and go with a really good 240 or 280mm AIO. There are some good ones that aren't all that expensive. The ID Cooling Frostflow 240mm models can be had for fairly cheap but I'd highly recommend something better, like the Corsair H100i V2 for 99 bucks. Plenty of options out there though and if you require RGB on the cooler then you might look at the ID Cooling Auraflow 240, among others.
If you are planning to overclock to 5Ghz, which isn't really going to give you much performance increase over the 4.8Ghz you already have then I'd suggest upgrading to a case that will either support a larger air cooler or a bigger liquid cooler.

The saying beggars can't be choosers applies in reverse to situations like these. Choosers can't be beggars. If want something more, you will need to pay for it. In this case, no pun intended, a bigger enclosure with more options including case airflow is likely mandatory. 5Ghz overclocks are not attained in 30 dollar cases using 50 dollars worth of cooling.

Go big or go home as we used to say back in my skater days.

You are not going to get a 5Ghz overclock on a 120mm, or even an oversized 120mm liquid cooler. If you are even stable at that frequency, which I have doubts about considering the fact that your thermals are within spec despite the use of a somewhat budget cooler, which leads me to believe the voltage is likely not high enough to provide stability, then I'd suggest staying right where you are unless you are willing to invest in a larger case and higher end cooling.

Yeah you're right, I see no point hitting 5ghz but I would like to get a liquid cooler as I've always wanted one.
