The third one is easy to rule out--IIRC the CPU launched in 2008 and the GPU in 2010--but the other ones are closer in performance. Number one has a proper workstation CPU and GPU, and probably has ECC memory. I don't know of Xeon E5 system that doesn't, but double-check. This isn't an advantage so much in itself, but DDR3 ECC is very cheap secondhand. You could double the stock capacity for a little over 40USD/Euro. This may or may not be an advantage depending on where you are. I looked at ebay.fr, and prices are very similar to the US market.
However Premiere doesn't care whether you use a workstation (Quadro) or gaming (GeForce GTX) card. The 750 Ti in the second option is newer, faster, and has more memory. The i7-2600 is built on the same architecture, but is a bit faster than the Xeon.
So: the first is better-suited to workstation tasks and a bit more readily upgradeable. But the second will be faster right away.

Edit: I forgot that the Xeon E5 uses the LGA 2011 socket, and is compatible with some really powerful CPUs that are inexpensive to buy used and faster than the i7. Basically, if you have another hundred and fifty to upgrade the memory and processor, that would be the best option.
