Best Raid 1 Solution (macOS Sierra)

I'm a video editor who needs more secure space at high read/write speeds. I explored Drobo and Synology options, but my hackintosh doesn't have a thunderbolt connection, neither brands support usb 3.1 except at the price of thunderbolt 3, and all other connections will be too slow for my read/write needs.

I currently have a 4TB Western Digital Blue as a sort of internal storage catch-all, and two Seagate 2TB BarraCuda SATA 6 Gb/s 7200 RPM 64MB (ST2000DM006) in a RAID 1 where I edit current projects.

This is definitely not an ideal solution, and not enough storage capacity as I continue to edit more projects in 4K.

My initial instinct is to combine all my internal storage into one volume and mirror it to a WD 8TB My Book for safety. Would combining my internal drives slow down my read/write speeds? Is it even possible with varying disk sizes? Is this a secure solution?

If I could, I would buy more 2tb BarraCudas and run them in a RAID 5, but diskutility only supports 1 or 0. Your advice is welcomed!
