I've read several threads but I can't figure it out. I'm thinking that any 2 RAM modules with the same speed and same size can be configured as a dual channel if the motherboard supports. Is that true? If yes, why some eCommerce websites selling single channel and dual channel RAM modules separately? Why are they tagging RAM modules as a single/dual/quad channel?
Do dual channel RAMs are different than regular RAM?

Only RAM bought as a matched kit is guaranteed to work together. Mixing RAM bought separately is not guaranteed to be stable, usually if you get the same make and model it’s ok but even then there is a small chance of stability issues.

I think you're trying to ask what the difference between kits and individual stick of rams are...correct? If so a it is a way for the manufacturer of the ram to say that they will both work out of the box at their rated speeds, timings and voltages. Individually sold sticks that are not in kits tend to come of an assembly line that have lower QC and essentially can have faulty sticks by the bundle.
Kits tend to see less of that are under stricter QC. The degree of QC will also vary per manufacturer.
