New gaming computer build, running slow and dropping frames. Not sure what to do!

Hey everyone, first time poster here but a long time lurker. This is my third computer build, however it has been my most expensive so far. Here is my build:

i5 8600K @ 4.3Ghz
MSI z370 Gaming Plus
ASUS STRIX 1080 AG
8GB DDR4 @ 2400Mhz
Noctua CPU cooler
1TB Seagate HD @ 7200RPM
Monitor is an ASUS Gsync 1080p 180hz.

I am running in 1080p resolution, and attempting to run games at 144Hz with GSync on. Everything works OK, but these are the issues I am having:

---Slow operation speeds in windows (opening applications, bootup, etc)
---high DPC lat (im getting 1000)
---Severe FPS drops. I have two games to test from, Fortnite and Rainbow6S. My computer runs fine in R6S, however I get unplayable stutters in Fortnite, no matter what graphical settings I am playing on.

I installed all drivers manually off the internet, and I think I got everything I needed, although I am not entirely sure. With school starting again soon, and my window to RMA limited I am hoping to solve these issues as soon as I can.. thanks to anyone who can help! If I can provide any additional information that I did not already provide please let me know :)

I am using 1x8gb
I would like to add that my disk usage is constantly running at 100%. Also my PSU is 550w
