I have an i7-7700k feeding it with deepcool captain 360. My goal is to get to 5.0. I'm using intel extreme tuning utility. I stress test it for 5.0 to 1.360 voltage. After 40mins it blue screen. My question is what voltage should I do next? It hasn't been de-lided because my fat fingers arent good with that kind of things.

You would need to increase voltage to keep it stable. It would run warmer with higher voltage so you want to make sure and check your temps if the cooler can handle it.
