As you've said, for the cpu, you're not going to overclock it, get the i7 8700 (non k!).

Depends what resultion you want to play, which monitor you're gonna get and how much it will cost. I suppose you first look at the gpu, get a 1080 or a 1080ti:
(1080) https://www.mindfactory.de/product_info.php/8GB-MSI-GeForce-GTX-1080-GAMING-Aktiv-PCIe-3-0-x16--Retail-_1227113.html
(1080ti) https://www.mindfactory.de/product_info.php/11GB-MSI-GeForce-GTX-1080-Ti-GAMING-X-11G-Aktiv-PCIe-3-0-x16--Retail-_1159483.html

If you want awesome graphics, I would go for a 1080p or a 1440p monitor on a minimum of 75hz for smooth gaming. At 4K the performance will not really that amazing and imo it's still really too expensive. Considering that 1080p monitor is cheaper, maybe you save money for a 1080ti.

And maybe for the case: the NZXT H500, has amazing cable management and some pretty decent airflow. And this is just my opinion: it looks a lot cleaner and more modern as well.

Hopefully I was able to help you out a little bit.

With a $2000 budget, you can get some crazy FPS and with the new rtx 2080s that just came out from NVIDIA but you will definitely need a beefier PSU like a 750W at least

Don't forget to get the am4 bracket for the cpu cooler. The price of 8700k indeed is very high in Germany. Not worth it.
