Will my Palit Gamerock GTX 1080ti Premium Edition and an AMD Ryzen 7 2700x be compatible? Can't seem to find it on any compatibility websites.

Yes, there's no reason it wont work. As long as your PSU has the necessary wattage and connector that is.

I'm very sceptical, as I cannot find a website that states that model is compatible. I don't fancy going for a Threadripper, as it doubles the price of my motherboard.

There are no compatibility issues between any given cpu and gpu. It will work.

You can buy a cheap cpu that holds back a high end gpu but thats not the case here.
