Perfect overclocking for gtx 1080 and intel core i7 8700k

You'll need to OC your 8700K I the BIOS. That chip can hit 5GHz easily so I would say somewhere in the range of 4.7-5.0GHz across all cores (just make sure you can cool it efficiently).

For the 1080, it depends on the card. You should play with the clock speeds for the VRAM and GPU until you find where the card comfortably runs an OC. Try adding 50MHz to the GPU and 100MHz to the VRAM at a time and see how the card behaves. Keep adding little by little and test after each change you make. If your system crashes during a game, restart the PC and lower the settings. If you are running too hot for your liking, then reduce the settings (you see where I'm going with this).
