Windows supports multiple adapters and drivers so you should be OK.
But, it is vastly simpler to connect all 3 monitors to a single graphics card.
Relatively static side monitors do not impact gaming on the main monitor.
Another issue might be power requirements.
You might have a 500w psu for your RX480 but need 600w for a second.
A better option which you could experiment with is to attach your side monitors to the integrated 8350k adapter.
I'm wondering if it's actually useful, will I get more FPS, shared load, ect, when using dual GPUs with multiple screens as opposed to one screen with 2 GPUs
Long time ago, I tried that experiment, connecting two side monitors to a cheap extra graphics card.
It made no difference in games and the image quality with a cheap gpu was terrible.
With a i3-8350K you should have a motherboard capable of using the 8350K integrated graphics.
You have the ability to try the experiment yourself.
Likely, I think, not worth the effort.
