The Xeons support 288GB RAM, the i7 64GB. There are also much faster Xeons available. X5690 6 core 3.4GHz or 2- X5687 3.6GHz 4 core Xeons that will give 8C/16T capability. It's going to burn some electricity and need some cooling to do it.
Each Xeon CPU will have 3 channels of DDR3 RAM so throughput should be good.
