For the FPS you will be getting a i5 8400 or 8600k are more than enough. If you were planning to run 1440p 144Hz with high FPS >100 then the i7 might be beneficial.
However an i7 might meet your needs longer but for today 4K with a single 2080Ti just isn’t pushing high enough FPS to benefit from the extra threads.

Looking at the actual I7 8700k price, I would recommend that you either wait until the price calmed down or go with Ryzen 5 or 7 second generation or wait for the I7 97xx.
For 4k gaming, which can still very limited by the GPU even with 2080ti, an I5 8xxx should enough. I7 8xxx or anything with more threads is however better for the future proofing.
