I am looking at G.Skill Ripjaws V 2800. 1 8gb stick is cheaper than 2x4gb. I usually only play WOW on the pc. How big of a difference will this make? Will be adding more memory in the future.

Setting dual channel (2 sticks) will double the data rate of your RAM and could translate to 30% increase in performance.
Mixing and matching RAM not tested to work together could results in computer issues (freezes, locks, BSoD, etc).

go with 2 sticks in a kit.. you should just get as much as you need now.. as compatibility between one you get today and one you get a few months later may not be 100% compatible..
WoW should run ok on single channel but just in general dual channel is better and should offer higher framerates, how much will vary by game.
How many RAM slots do you have? if you have 4 you could add a dual channel kit now and a matching dual channel kit later.
In an Ideal world where budgets don't matter the best option is just to go for 16gb of dual channel from the start, it's the safest option all round.
Buying 8 now and 8 later should work, but might very well cause issues as jojesa said.
