M.2 SSD - 1 TB vs 2 TB - Why is there a premium?

I noticed that for both SATA and NVMe SSDs in the M.2 form factor, the 2 TB variants cost more than double the price of the 1 TB models. Why is that? I'd like a single 2 TB drive, but because of the price, I'm leaning towards buying two 1 TB drives, and placing them in RAID 0.

It doesn't seem to me that a 2TB SSD is worth the $$$ unless you are doing video editing or some other I/O intensive activities on a regular basis. You still have to have some other storage to do backups. You could get a couple spinning disks and have a primary and backup copy for the cost delta between that 2TB and a 512GB ...

But that doesn't answer your question ... Why? Because they can. That is a low volume sales product for home. So they can charge a premium.
