I am wondering if, with the h500i, I could plug in my Coolermaster RGB fans and control them with the CAM software?

Unfortunately no. The only thing you can control with CAM are NZXT products.

But you can do some DIY!
If there's a button on your Cooler Master case to control its fans, you can physically tear it apart and connect it on your motherboard in your new NZXT case and find a way so that you can click it from outside the case and voila!
