Where, if anywhere, to put the two temp sensors that came with Gigabyte motherboard? (Unusually full case.)

Shoehorned into a Corsair 300R case, I have just installed a 9th gen. Intel i7-9700K on a Gigabyte Z390 Aorus Ultimate mobo, cooled by a Noctua NH D15 with its two big fans. This build also includes one Noctua fan exhausting at the upper rear, two Noctua fans on intake on the lower front, an EVGA 1060 GPU, and a Corsair RM750X PSU. Most of the top of the case is open except for dust screens. All motherboard slots are full, mostly with various adapter cards as this PC is connected to three scanners, five printers (mostly photo), along with other peripherals. Finally there is 32GB of RAM.

There is so much crammed into this (too) small case that I am concerned that something might overheat (other than the CPU and GPU, which I assume have temp. sensors built in). The mobo came with two sensors and has connection points for them (I assume intended for water cooling). Should I check the interior case temperature? If so, where and what is too hot?

What else do you suggest, please? Do I need another fan or two?
