So ive researched ryzen cpu's and ive got 16gb 2133 mhz ram which i overclock to 2666 could possibly go higher also. If not I could just buy some more in time. I have a gtx 1080 aswell to go with this decision.

So to the decision...

1 -The ryzen 5 2600x is 170 pounds right now
2 - Ryzen 7 1800x is at 200 right now.

I know people will say get the 2700x but that is 280pounds which is just going over my budget. What should I choose for gaming mainly. Why also?

Tough call honestly, the 2600X probably games a little better at stock speeds and might overclock a little better, the 1800X has more cores which doesn't matter for gaming that much right now but could be useful in future. Also the 2600X memory controller is a little better and won't suffer quite so much with the slower RAM you have.

I got a 2700X, it games very well. It does spend a lot of time with half the cores doing nothing though....
I think I'd choose the 2600X, but I don't think it's going to be a bad choice either way.

Or you could go for an i5 8400 just for the hell of it :) - and because it will work better with slower RAM
