Can I then plug in my old ssd, which will still have windows on it, grab all my docs etc and then format it to remove the old copy of windows?

Yes, but not a simple "format".
Doing that will only remove what used to be the C partition.
You also need to remove the original system partitions.

The diskpart command, and its clean function.
