Probably just high. Having a faster Duo or a fast (>2.66GHz) quad would help a bit, as would a GPU with a little bit more power. Ultra High is reserved for top end systems, and even then, setting AA above 4x (or even 2x) is not possible.
It would.. Probably be able to handle high considering that you have an Nvidia card, i could run high at 1680x1050 with my 4870 with decent Framerates but its an ATI card, so your gtx 260 should do much better at 1680x1050. any higher i would not recommend, if your monitor doesnt go up to 1680x1050 then it should have no problem running high.
