Decades ago, i used to play world war 2 bomber sims and sub sims for hours, even with that technology is seemed really realistic, I'm kinda looking for something like that now.
There was a good sub game ages ago, but I forgot what it was called; it was on the same disk as "A-10 Thunderbolt", "Aces over the Pacific" and "Aces over Europe". It was "Something" of the Deep...Both Aces games allowed you to sign up as a bomber pilot though, which was cool for 1996...
Age old game though; I think it won't run due to needed both Extended AND Expanded RAM to run...

I'm quite surprised nobody has mentioned the Silent Hunter games. If you pick up number 4 (which I recommend) make sure you get the expansion with it. The last patch (1.5 I believe) was only available as part of that, and it is quite important.
You can adjust how realistic you want the game to be. You can, if you want, set it so all you see is what the commander would see, the bridge. Or can dial the realism right back and have external cameras and help with everything. Good fun, if you like the genre.
Though it suffers from obsolete graphics, it is still considered by many to be the best subsim to date, for it revolved around its highly randomized and replayable single player "Career Mode", also found in SSI's Silent Hunter.
Silent Hunter 4 is probably the best one out for PC. I remember years ago playing Silent Service on the Atari ST / Amiga.
I did own Silent Hunter 4 for a while... on the harder settings its blooming frustrating hunting enemy convoys only to be blown to smithereens by an over effective destroyer escort.
I beleive there was another game Steel something or other that allowed you to play a destoyer commanded hunting subs...
Currently the Il2 1946 sim is the best for WWII aviation, download the mods and you get the US heavies. B-17 II Flying Fortress The Mighty Eighth is still the best bomber sim but its been about 10 years since its release so some of the newer hardware won't play it well. Try it still if you want.
Later this year or sometime next year Storm of War: Battle of Britain should be released as a new sim.

While the FM's aren't perfect they are better than most dealing with WWII aircraft. Either disable the stall ability or don't hamfist the stick. Some a/c are easier to stall than others just like IRL. Its a skill that takes time but gets easier to feel the more you fly. I used to get pissed at it too but kept at it and improved my skills for it. The problem with the flight sim genre in general is it takes more time and skill to get good than the twitch shooters, probably why its one of the smaller gamer segments.
My guess then is your stick settings are jacked up. Some are better than others, stock saitek settings have worked best for me and given the best control, I've been working on my license myself. Since you have a pilots license play with the settings until you find what feels correct.

Funny enough, I've been using the Saitek one. I mean, I know the IL2 in particular is hard to fly, but its rediculous how some small movements in game cause a stall, every time (even at high speeds)...
I THINK Aces of the Deep will run on modern PC's (might need the aid of DosBox though...); I know the other Aces games need Extended/Expanded RAM to run...
