My deluxe mb has an RCA spdif out. I was told that the ideal was an optical connector. Why did asus put an RCA one, which is electrical and prone to interference, resistance, etc?

SPDIF is digital! No worries with interference even with COAX. As for impedence, just get the right cable for digital.

COAX cable is also a lot a cheaper than optical cable.

I was once believe that tosslink optic fibre connection is better than RCA coaxial but this not necessary be true all the time. The debate between coaxial and optical connection is long and boring, if you want to look deeper into this you can do a google search.
The only nForce2 equipped with optical output is Abit NF7-S; RCA coaxial is cheaper and more widely distributed because most digital receiver or digital speaker comes with coaxial only or both, I seldom see any digital receiver with optical connection only.
