in general:

what's the difference between a 865PE and a 875P chipset, and in what situations (gaming, CAD, ect..) would one be better than the other?

They use the same core. Intel produces both at the same time, but puts the 865 on a pin grid with fewer pins. The missing pins are for use with ECC memory. Most users don't use ECC.

The other difference is that Intel disables a latency shortcut called PAT on the 865PE, but that seems to have a miniscule effect on performance.
