Gradual computer freeze

I'm not sure if this is related or not to drivers but I have this problem. When playing sc2 and listening to itunes, my sound will start to glitch and slowly things will start shutting down. Internet, then keyboard, then blue screen. I have about 5 minutes to finish whatever i'm doing. All the while the cpu is glitching. any help?

it could be your computer over heating.
get a can of compressed air and cleam out your PC.
while you have case off - make sure all the fans are still running - dont leave the case off for long though.

Yup, sounds like a heat problem to me as well. Download HWMonitor and stress your system a bit. Check and record the temps before the system starts to lock up and post them here, along with your system specs.

what temperatures are safe for i7 and Radeon 5870?

The lower they are the better, but try to keep the CPU under 55-60C, and the GPU under 65C. The maximum temps for both parts are well above those numbers quoted, but the cooler you can keep them, the longer they will last.
