This is what I have in mind so far:

Athlon 64 3200+
MSI K8N Neo3-F
256MB nVidia 6600 GT

Any other suggestions building a budget-wise gaming system?

What kind of RAM should I go with?

Why don't you put some money in a MB with SLI?
My advice would be:
Asus A8N-Sli nForce4Sli SK939
costs about the same and later on you can buy another graphic card to upgrade your system.
Buy dual channel memory, i wouldn't advise less than 1Gb (2x512Mb).
