Intel® Pentium® M Processor 750 (1.86 GHz/2MB Cache/533MHz FSB)
Nvidia Go Geforce 6800 256 MB
1 GB ram
40 GB HD

Yeah, I know it's not the best of the best, but how would it perform in graphics heavy games such as HL2 or BF2?

Pretty good and among the best graphics cards you can get mobile.
RAM is sufficient, I would not get less,
but would want hard drive to at least be a 7200rpm model.

How well do you think it would run the aforementioned games? High quality? Med?

That would depend on your resolution since it is essentially fixed for optimum quality.
I would suspect it could run them at high quality though.

And have no doubts that medium quality on the more demanding games if high is stuttering.
