I wouldn't really call that a dream system. What's your price range? I would suggest a dual mp setup with 4 181gb ultra 160 drives. And whatever else is the top of the line video and sound.
Just my opinion, but I'd buy a boxed 1.2 CPU (and overclocking it to 1.4!) which includes the factory heatsink and fan. Keep in mind, this IS THE ONLY WAY that you will get a factory warranty! Given that the 3-year warranty on boxed CPU's from AMD also covers the heatsink and fan kit, I can't imagine anyone buying anything else.
Next, I would forget about mixing ANY creative card with an AMD based system that uses a Via chipset, so I'd stick to any motherboard using the 761 chipset unless you want to use one of the many solutions out there that is better than the creative labs cards. Remember, if you are looking for anything in terms of support from your audio card maker, you shouldn't be looking at creative labs. Sure, you can get drivers (well, sometimes you can), but forget about ever talking to anyone in support.
Power supply is simple.. Enermax, any model from the EG365P-VE or higher. Simply the best with a great warranty.
Make sure that 512MB is on no more than 2 sticks and if you haven't purchased your RAM yet, I would take a hard look at Mushkin and Corsair modules. The Mushkin hand-picked is DAMN fast, I can't even begin to tell you how nice it is!
Both the IBM Deskstar 60GXP and Seagate Barracuda drives are excellent. You shouldn't have problems with either.
I won't talk about the GF3, I'll leave that to the die hard video guru's that might know (or ask) more about what you intend to use it for.
Mobo: If you're not planning on overclocking, get the ECS K7S5A. It's incredibly stable, got the fastest chipset currently on the market (SIS 735, which unlike the nForce and KT266A, actually IS on the market), and it's about half the price of most other mobo's. Be warned though that it is almost impossible to overclock.
If you are planning on overclocking, then I would recommend the new Epox 8KHA+ mobo with the KT266A chipset, which will be out on Sept 28 http://www.epox.com/html/english/default.htm). The chipset is faster even than the nForce chip, and this board is an overclockers dream.
The Abit board is good as well.
Hard drive: I would recommend the Seagate Barracuda over the IBM deskstar. It seem to be much better quality, especially since the IBM drives seem to crash at around the 3 month mark (I know, I know, it's the old 75 series that crashed, not the 60 series, but I'm still leery).
Of course, if you really want performance get the 80 gig SCSI Ultra160 version of the Barracuda. Or better yet, get 2 and strip them. be warned, at over 10,000 RPM they are going to be hot and noisy.
As for the GF3 video card, I recently read a review that compared cards from 4 different manufacturers. All 4 cards performed within 1% of each other. Since all GF3 cards use the same chip and the same type/speed of RAM, they all perform identical to each other. Get whichever is the cheapest that has the functions that you desire. The brand name doesn't matter.
As for the power supply, you can't go wrong with an Enermax. Another good buy would be an Antec power supply. Both brands are quiet and have 2 fans.
As for the heatsink and fan, don't bother. The top performers are all too noisy, with the exception of the Noise Control Silverado. But the Silverado gives mixed results. For some people it works great, for others it's hardly better than no fan at all. My recommendation is to go for water cooled. Beware though, water cooling is not for the faint of heart! Mixing water with electricity isn't such a hot idea.
This is my dream system, and I own it.
The only thing I'd want to do differently is possibly dual 1.2 GHz MPs or higher. Everything else is plenty fast for me.

and I'm about to buy new CD burner and DVD drives. I have a Creative labs 32x-6x DVD drive, and a Sony 4x-2x-24x burner.
My case is modded to have 4 fans intead of 2 and I only have a generic 300 watt power supply (I guess its good quality generic).
Well I'm replacing the DVD and cd burner drives, not adding 2 more to the system, but yes I'm pushing the envelope power wise with this setup.
The Game theater XP is a super nice card, I love the optical out and I use it to make minidiscs from my CDs and mp3s. My only beef with Hercules and their GTXP is that theres no Windows XP support right now. Besides that I think the card is great.
I want my machine to be a profesional editing machine though so I'm looking into an Audigy EX, and a Matrox RT2500 to put in, and maybe dual MPs, that would be the ideal editing/gaming machine really.
