I goofed while trying to get a little disk space by removing old versions of
aol. A window opened and asked if I wanted to remove aol from list and I
chose YES! It removed the whole aol entry from the list. My question is how
to reverse this action and get the add / remove program list to show all
programs? I don't have gaps or white space in the list that does appear.

In case of missing / incorrect Uninstall string and when you try to uninstall the corresponding software via Add/Remove, you'll be asked to remove the invalid entry or not. To reverse this action (though not needed), try a System Restore.
