Just bought a 560ti and have e6600 for skyrim

I have a 560ti coming tomorrow to replace my 8800gtx and I was wondering if I'd be able to max out skyrim at 1920x1200? my e6600 isn't overclocked either and I only have 2gb of ram.
 
you could have ran it on high with your 8800gtx. you should have upgraded your cpu and ram first. your e6600 would have been bottlenecking even your 8800gtx. Skyrim is very cpu limited, upgrading your graphics card will have little effect on performance. an e6600 will give abysmal performance

I think if you add another 1-2GB of ram and Overclock your cpu to about 3.2Ghz it would be fine but as the other person said you should have upgraded your cpu and ram first, the 8800gtx is still able to run new games very well, your cpu is going to be bottlenecking your graphics card.
 
depending on the game your gonna have issues. any title that prefers quads (has a quad listed as recomended) your cpu will bottleneck the gfx. it will be so bad you will only be able to play games like BF3 at 15fps or less bouncing to 40fps max.
if you want to sort this out you have only 1 option a cpu upgrade. over-clocking wont help, sorry...
you may get to play skyrim though as i dont thing its that cpu demanding. but its a bethista engine and its quite finikey about hardware.
