Group By Tags ordering in a folder - how to tag files?

Hi!
I've created a folder on my Desktop för a database course I'm taking right now. I'll have a lot of folders and files in this folder and I'd like to group them up with tags to get an easy overview of everything.
I chose to group up everything by Tags as can be seen in this image but right now everything is under the "Unspecified" tag it seems. How can I add tags to the folders and files så I can group up the two .chm files as "Books" for example?
