Is there a way of resetting my sharring permissions back to original settings, I have them so messed up.

Original? Original, is not shared...you can do that easy
If you want to do it right....we will need more details.
Operating system? File system. (please use advanced settings)
Scenario...host/guest OS....firewalls...shares you want, permissions you want.....
