Cant find anything in BIOS showing RAM timing let alone somewhere to fiddle with them.
Found a bit on 'net said hold Alt-F1 (rather than delete) during start up... doesn't seem to work.
Gigagyte GA-8PE667
Any ideas?

Ive got CL... Auto, 2.5 or 2, but thats all. Is that it? Others must be there somewhere?

LOL no...

You press delete during setup to go in bios, once you're in press control+f1 to get advanced chipset features.

From what I've read you need to press Alt-F1 AFTER entering BIOS. So go ahead and hit Delete at start up.
